Recipe: Pumpkin Pie Pudding

pumpkinpieOk, I’m on a mock “pie” anything right now. Just a day or two ago I posted those awesome Apple Pie Bites and today, I offer you Pumpkin Pie Chia Pudding. There are tons of recipes for this out there, but the difference here is mine has been kid approved! I approve it too, but having someone with discerning taste buds approve, that holds a bit more weight, right?!


1 can of pumpkin puree
1 1/2 cups of cashew milk
6 dates
1 tbsp of maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
6 tbsp (3/8 cup) chia seeds

Put everything but the chia seeds into a blender and just pulse it a couple times. I have a ninja so I just blasted it for a  few seconds to break down the dates then it was ready for the seeds. I pulsed it a few more times.

Find some small containers. This divides up into 4-6 decent sized portions, depending on how much you want. Chill for 30 minutes and enjoy!
